There are generally three varieties of the viscous substance, including light, dark, and blackstrap, and are each created during the production of raw cane sugar. After the sugar cane is crushed and processed, the resulting syrup is boiled into a substance known as molasses. During maximum extraction, this syrup can then be boiled a third time, resulting in blackstrap molasses, which typically has a more bitter, fuller taste. Molasses, unlike refined cane sugar, is filled with the vitamins and minerals that were present in the plant. With a strong flavour, molasses is the perfect healthy sweetener in gingerbread, marinades, homemade barbeque sauce, baked beans, and many other dishes. Other vitamins and minerals in molasses include vitamin B6 and zinc, which help balance hormones, reduce stress, and promote healing.
