Chickpea salad

Chickpeas are great to have any time of the season, they are rich in protein, fiber, vitamins and minerals, all which help towards having healthy and clear skin and excellent for overall health. So If you’re looking for a salad that fills you up throughout the day and gives you an overall health boost then here’s what you’ll need:INGREDIENTS
- 1 can of organic Bpa free chickpeas, rinsed and drained
- ⅓ cup of red bell peppers (capsicums)
- ¼ cup sliced green olives
- ⅓ cup sliced cherry tomatoes
- Small bunch of parsley, chopped
- ½ cup of green onions chopped
- 2 cloves garlic, pressed or minced
- 1 lemon, juiced
- Olive oil, to taste
- Salt and pepper, to taste
- In a pan, cook the chickpeas and garlic for 5 minutes until they have a slight golden brown color and set aside.
- In a good-sized bowl, simply combine all the ingredients, season with salt and pepper, drizzle with olive oil and squeeze a lemon over it all. Mix, and you’re done!
