A – Z of foods that benefit the skin; Kale

‘K’ is for Kale Kale is a super food for more than just the skin. Loaded with Vitamins A, C and K, kale can top you up with twice the amount of Vitamin A, 2.5 times the amount of Vitamin C and a whopping 10 times the amount of Vitamin K you need in a day if you eat just 100 grams! Now these are fabulous vitamins to be absorbing both for our insides and out, but Kale is also highly anti-inflammatory and contains substances that break down toxins in the liver, so also a natural detoxer. Kale is in season from mid winter to early spring, so it’s soon going to be everywhere in the shops. It comes in a variety of different sizes; the smaller sized bunches being a little sweeter to the taste than the larger. Kale, I think is a bit of an acquired taste but throw it in a smoothie and you don’t even realise it’s there!

Green Smoothie

1 Handful Kale 1 Banana 1 Pear 1 Cup of coconut milk Water Chop the fruit and kale, pop in the blender with the coconut milk and water to give you your desired consistency. Blend for a couple of minutes…and voila – a clean, green smoothie with healthy fats to help give you that satisfied feeling. How easy is that? ...But this is soooo easy that I couldn’t resist giving you a second recipe!

Oven Baked Kale Chips

I bunch of Kale (chopped into quite large pieces) Salt/Pepper/Chilli etc to taste Preheat the oven to 180 – 200 deg; sprinkle some olive oil into a baking tray and sprinkle in the chopped Kale. Add salt/ pepper/ chilli to taste and bake for 10 – 20mins. Out will come some crispy chips that have a great texture and taste and are way better than store bought chips for your skin.
