A – Z of foods that benefit the skin; Eggs

‘E’ is for EGGS Eggs are the perfect way to get a bit of protein into you, at breakfast time. The average egg contains 5.5g of protein. Protein is a great way to help stabilise blood sugars and keep you feeling fuller longer so far less likely to hit those sugary snacks mid-morning, which we know do our skin no favours. Eggs are also high in tryptophan, which is an amino acid that our bodies use to produce serotonin and melatonin. Serotonin is the feel-good hormone and melatonin is the guy who regulates our sleep. So if you’re lacking either of these you may be feeling anxious and/or stressed and have poor sleep patterns – another two vital ingredients to having clear, glowing skin. So our morning eggs are great for us, but also, there are so many ways to have them you could never get bored! Boiled, scrambled, poached, omelette… The good old boiled egg is one of my favourites, because you can boil a few and the ones you don’t eat straight away, keep in the fridge, for a quick healthy snack. They’re easy to take with you too. Pop them in a plastic bag and if the shell cracks – no problem; you would have to take it off before eating the egg anyway J

The Good Old Boiled Egg

  • 2 Eggs (organic if possible)
  • 2 Slices of Sourdough toast (to serve)
  • Ground Sea Salt and Black Pepper
Pop eggs in a saucepan with enough water to cover the eggs (don’t pop them in hot water straight form the fridge – they will crack) Cover and bring to the boil. If you want your eggs easy (soft boiled) boil for 3mins. If you prefer them hard-boiled; boil for 5 – 7mins. Remove the eggs from the water and pop into egg holders.
